Chuck
About
This primal comes from the shoulder area and yields cuts known for their rich, beefy flavor. Some cuts from the chuck primal are ideal for roasting, while some are more tender, grill-ready type cuts. Chuck Eye Roast, Delmonico Steak, Flat iron Steak, Denver Steak, and Country Style Ribs all come from this area and are cuts that you'll find in our meat counter.
Flank
About
The flank primal is located below the loin and is home to the flank steak. Cuts from this area are lean, flavourful, and best when braised, or marinated, or grilled.
Loin
About
Cuts from the loin primal are highly sought after due to their natural tenderness and exceptional flavor. Popular cuts from here include the filet mignon, kc strip, porterhouse, T-Bone steaks.
Plate
About
Located directly below the ribs is the plate primal. These are fattier cuts of meat that taste great when cooked slowly. Popular cuts include short ribs and skirt steaks, which are generally used as fajita meat.
Rib
About
The rib primal is located under the front section of the backbone and contains cuts that are full of flavor. This primal contains 7 ribs (6th -12th) and produces cuts such as back ribs, ribeye, tomahawk ribeye, and prime rib roast.
Round
About
The round primal contains inexpensive cuts of beef that come from the rump and hind legs. The muscles in this area are used for movement, so the beef is leaner and less tender than other cuts. Additionally, cuts from the round primal are often sold as roasts, steaks for marinating, or as ground beef.
Shank
About
Shank is a portion of the leg, which is used extensively for movement. As a result, it is typically cut into cross sections called shank cross-cuts, which are braised to make flavorful, fork-tender dishes such as Osso Buco.
Sirloin
About
The sirloin primal is home to popular fabricated cuts after the top sirloin and bottom sirloin is separated. The bottom sirloin contains very popular cuts like the tri-tip steak and sirloin Bavette.

Our Livestock
We raise and care for all of our livestock, using only USDA best practices when it comes to feeding and processing at our local facilities. Our livestock is grass-fed or premium grain-finished, with no added hormones or antibiotics, and each is ethically processed and hand-cut when completed.
